How do you tell a fresh egg from a stale one? Pro tip: a fresh egg will sink when placed in a bowl of water, an older egg will float.
FRESH
Store eggs outside the fridge in a cool place such as a grocery cupboard where there are no fluctuations in temperature. If you prefer to store them in the fridge, keep them in the middle where the temperature is constant, rather than in the door. Also store eggs in the carton you purchased them in so that they don’t absorb food odours.
FRIED
Runny whites are bad. When making fried eggs with a good cooked consistency either cover the pan with its lid or spoon over the extra oil onto the egg whites to help solidify them.

POACHED
Use the freshest eggs as possible. Adding a teaspoon of vinegar helps the egg white to coagulate and prevents those little white strands from forming on the egg.

BOILED
Soft-boiled: 5 to 6 minutes
Medium soft-boiled eggs: 7 to 9 minutes
Hard-boiled eggs: 9 to 11 minutes

SCRAMBLED
Break the yolks, and keep stirring to a minimum.
Try: Skinny eggs with spicy Mexican tomato sauce.
OMELETTE
Even heat distribution and a flat pan (not warped). Make sure they are whisked until fluffy. Add a little water or milk to make them light.
