Hake, celery and lemon risotto oven-baked

Ingredients
- 300 grams fillets, raw, cubed hake
- 3 celery sticks, sliced
- 1 cup raw risotto rice
- 2 cups boiling water
- 4 tsp stock granules, vegetable
- 4 tbsp butter
- black pepper
- 1 tsp lemon zest
- few tablespoons fresh coriander
- Parmesan cheese, grated, optional
Cooking Instructions
Preheat oven to 200oC. In oven dish with lid, add rice, raw fish, water, celery, vegetable stock, butter/margarine, red bell pepper, lemon zest, coriander & pepper. Stir everything together, put the lid on and bake for 30 minutes. Remove from oven, stir, put lid back on and bake for 20 minutes. Sprinkle Parmesan cheese over and enjoy.
