Ingredients

2 cups canola oil
2 -3 baby marrow, thinly sliced
Maldon salt, to taste
smoked chilli flakes, a pinch

Method

1. Heat the oil in a saucepan. Fry the baby marrow for 5 minutes, or until golden brown. Remove from the oil and drain on kitchen paper.
2. Sprinkle with the salt and chilli flakes. Serve immediately.
